Sourdough Pancakes
My sourdough starter has been showing sign of inactiveness lately so I have decided to give it a bit of boost by replenishing it with some fresh flour. But what am I going to do with the discarded starter? Make Sourdough Pancakes of course! They are light, soft and fluffy. Together with berries compote, it's a perfect Sunday brunch item!
The recipe is very simple and you can probably find all the ingredients in your kitchen.
Ingredients (10 pancakes)
180g All purpose flour
240g sourdough starter
240ml milk
25g sugar
2 eggs
2tsp baking powder
1tsp baking soda
Pinch of salt
25g melted butter
Whisk all ingredients together (except the butter), let it rest for about 20mins. When you see the batter starts bubbling, add the melted butter and you are ready to cook the pancakes.
Gently heat the pan with a thin layer of oil and add a ladle of batter in the heated pan. When you see the top start bubbling, flip over. It takes around 1-2mins each side.
While you are resting the batter, you can make some berries compote to go with it.
Berries Compote Ingredients
2 cups frozen or fresh berries
60g sugar
Mix berries and sugar together in a saucepan, gently heat until all sugar is melted and thicken a little. Let it cool down and it will get syrupy.
Pour over your pancakes and top with some whipped cream or nutella if you are in the mood of being very naughty!
