Smoked Haddock, Poached Egg and Mash - Not Even 600kcal

Updated: Jan 17, 2021

I cannot claim credit for this recipe because I actually found it on SlimFast website when I was googling for idea to make low calories but delicious dinner. But what a great find! For 500kcal, I got fish, egg, mash, vegetable and creme fraiche sauce! And for those who don't enjoy cooking very much, I tell you, half of this meal is done by microwave (even better!). So let's get in! (This recipe is for 2)

240g Haddock (235 kcal)

200g Spinach (38 kcal)

400g Potato (308 kcal)

2 Eggs (150 kcal)

80g Light creme fraiche (130 kcal)

1 tsp Mustard (3 kcal)

10ml Olive Oil (88 kcal)

juice of 1/2 lemon (5 kcal)

Salt & Pepper

Each Serving is 478.5 kcal.

  1. Peel, dice and boil potato until soft. Then add olive oil and mash. Season with salt and pepper.

  2. In a separate pan, boil water and poach egg. Here is the link to make perfect poached eggs if you are not too sure how to go about this:

  3. Put your haddock in microwave-safe container, add a table spoon of water and loosely cover the top with a lid. Microwave on high for 3 min. Smoked haddock by itself is quite salty, so don't add salt to it.

  4. Then microwave your spinach in microwave on high for 2 mins, season with salt and pepper.

  5. Lastly, mix your creme fraiche, mustard and lemon juice, microwave on high for 1 mins

Now it's all done and ready to serve!
