Smoked Haddock, Poached Egg and Mash - Not Even 600kcal

I cannot claim credit for this recipe because I actually found it on SlimFast website when I was googling for idea to make low calories but delicious dinner. But what a great find! For 500kcal, I got fish, egg, mash, vegetable and creme fraiche sauce! And for those who don't enjoy cooking very much, I tell you, half of this meal is done by microwave (even better!). So let's get in! (This recipe is for 2)
Ingredients:
240g Haddock (235 kcal)
200g Spinach (38 kcal)
400g Potato (308 kcal)
2 Eggs (150 kcal)
80g Light creme fraiche (130 kcal)
1 tsp Mustard (3 kcal)
10ml Olive Oil (88 kcal)
juice of 1/2 lemon (5 kcal)
Salt & Pepper
Each Serving is 478.5 kcal.
Method:
Peel, dice and boil potato until soft. Then add olive oil and mash. Season with salt and pepper.

Put your haddock in microwave-safe container, add a table spoon of water and loosely cover the top with a lid. Microwave on high for 3 min. Smoked haddock by itself is quite salty, so don't add salt to it.
Then microwave your spinach in microwave on high for 2 mins, season with salt and pepper.
Lastly, mix your creme fraiche, mustard and lemon juice, microwave on high for 1 mins
Now it's all done and ready to serve!
